"gentle sincerity (a character that is calm, deeply caring, and honest)"

Head Chef
Kensuke Abe
Born in 1985, from Miyazaki Prefecture, graduated from Nissho Gakuen High School's Culinary Department. After training at a Michelin-starred restaurant in Ginza and a highly exclusive, members-only sushi restaurant that is extremely difficult to book,
he served as head chef at a high-end sushi restaurant in Tokyo for four years.
"Sushi Kensuke" opened in Azabu-Juban on October 1, 2025.

日本酒の銘柄名には、蔵元の哲学や願いが込められています。

「而今」とは、禅僧・道元が説いた言葉。
過去にも囚われず、未来にも囚われず、ただ“今”を精一杯生きる──
その世界観を、21世紀に静かに、そして力強く広めたのは、僧侶ではなく日本酒でした。
今回ご紹介するのは「而今」のフラグシップ的存在である 特別純米。

■ 「弥助」の由来
明治から昭和初期にかけ、花柳界では鮨のことを
「弥助」と呼んでいました。
その名を冠した 「弥助」は、鮨とともに楽しむために生まれたお酒。3年もの歳月をかけて、香りを抑え、旨みと辛口のバランスを極めています。
■ 受賞された確かな実力
「日高見 弥助」は SAKE COMPETITION 2025 純米吟醸部門 BRONZEを受賞。華やかすぎない、落ち着いた吟醸香とキレのある辛口は、数ある日本酒の中でも鮨と寄り添うために磨き抜かれた味わいです。

For sake fans, everyone knows ‘Dassai’.
Among them, ‘Dassai Blue’ is a truly unique bottle that stands out.
The name of this sake comes from the Japanese proverb
‘Ao wa ai yori idete ai yori aoshi’ (Blue comes from indigo, but is bluer than indigo),
a phrase meaning to learn from a master and eventually surpass them.
With the determination to ‘surpass even the Dassai born in Japan,’
the brewery took on the challenge in New York, America.
The fusion of overseas climate and Japanese technology
created an unprecedented refreshing and clear taste.
The first sip offers a fruity aroma and a light mouthfeel.
From the second sip, a gentle sweetness like cotton candy and a crisp aftertaste follow.
