among all our staff, and we strive to improve every day.

‘Dassai Blue’ — Ao Wa Ai Yori Idete Ai Yori Aoshi

2025 09 11

For sake fans, everyone knows ‘Dassai’.
Among them, ‘Dassai Blue’ is a truly unique bottle that stands out.

The name of this sake comes from the Japanese proverb
‘Ao wa ai yori idete ai yori aoshi’ (Blue comes from indigo, but is bluer than indigo),
a phrase meaning to learn from a master and eventually surpass them.
With the determination to ‘surpass even the Dassai born in Japan,’
the brewery took on the challenge in New York, America.
The fusion of overseas climate and Japanese technology
created an unprecedented refreshing and clear taste.

The first sip offers a fruity aroma and a light mouthfeel.
From the second sip, a gentle sweetness like cotton candy and a crisp aftertaste follow.
Easy to drink, yet with depth
—it’s a magical bottle that makes you want to keep refilling your glass.

Sushi Kensuke’s master, too,
with the spirit of ‘Ao wa ai yori idete ai yori aoshi’ in mind,
will begin a new challenge to make waves in the sushi industry.

That is why Dassai Blue is
Sushi Kensuke’s signature sake.
This one glass embodies our challenge and our feelings for our customers.

Please enjoy it for your first toast.
And with your sushi.
Enjoy a glass that will light up a new ‘blue’ in your heart.
